Beef Tacos with Guacamole and Salsa

Guacamole (look at Quesadillas page for the recipe)

Salsa – Ingredients

2 large tomatoes, diced finely

3-4 tablespoons chopped coriander

small sweet onion, chopped finely

1/4 jalapeno, chopped finely (omit if you want it to be hot)

salt and pepper

1/2 teaspoon paprika

1/2 lime, juiced

Salsa – METHOD

Mix all ingredients and lime juice in a small bowl – put aside.

Beef Tacos – Ingredients

1 packet of good ground beef about 2 lbs – not too lean (85% should be ok) – just over 1 lb for 2 people is ok

2 tablespoons of oil

2 cloves of garlic, chopped finely

1 large onion, chopped finely

1/2 jalapeno chilli chopped fine (use less or more if you smell it and it seems strong)

4 tomatoes, diced

2 tablespoons TJ’s Taco seasoning

2 tsp ground cumin

1 tsp of paprika

2 packets of corn tortillas (1 packet should be ok for 2)

1 bag of lettuce (butter or romaine) 

Sour cream (small tub) OPTIONAL

Chopped cilantro

1 packet of shredded pepper jack cheese (you can also buy a small piece – 4 oz or so of solid cheese and grate that OR cut up 4-6 slices of pepper jack cheese into small pieces)

Beef Filling – METHOD

Heat oil on medium heat, put in chopped garlic. When lightly browned (less than a minute), add chopped onion and jalapeno.

Add paprika, mix then add the beef; cook; breaking up meat with a spoon until no longer pink, about 5-10 minutes.

Add tomatoes, taco seasoning, salt and pepper and cook , stirring occasionally for 10-12 minutes until thickened. Mixture should not be watery, just moist.

Warm tortillas in skillet (frying pan), and keep warm in a clean dish towel.

Putting them together

Take a warm tortilla, add some of the beef mixture.

Top with salsa and lettuce, shredded cheese.

Add sour cream and guacamole.
