Ingredients – Quesadillas
TJs Corn Salsa – 1 bottle
TJs Cherry Peppers – 1 bottle
TJs Taco mix packet
Chicken sausages (4 pack) – any variety that you like – I get TJs Jalapeno Chicken
Packet of quesadillas
2 medium sweet onions
2 green chillies (optional)
6-8 small mushrooms (small portobello mushroom are really good, but any you can get will be fine)
1 bell pepper – any color
4 cloves garlic (you can buy 1 head, it will last well in fridge)
1 medium firm tomato
1 small lime or lemon
1 bunch of coriander
You should have at home
2 tablespoons oil
Salt and Pepper
Chop the onions, mushrooms and pepper into reasonably small dice. Put aside half an onion worth of dice for guacamole in a bowl.
Take 3-4 cherry peppers from bottle, drain and chop into small dice.
Chop chillies and garlic finely. Put aside half of garlic and chilli for guacamole.
Wash and chop coriander finely – put aside 3-4 tablespoons for guacamole.
Chop tomato finely – save for guacamole.
Chop chicken sausages into smallish dice.
Heat oil in frying pan on medium heat. Add onions, mushrooms, garlic and chilli when hot. After a 4-5 mins, add diced bell pepper.
After 5-6 minutes, add died chicken (make sure there is not too much moisture in the pan from the pepper and kale). Mix and cook for 2-3 minutes.
Now add diced cherry peppers, 3-4 tablespoons of corn salsa and the chopped coriander. Cook for another 2-3 minutes.
Add seasoning: 1 tablespoon of Taco mix, 1 teaspoon salt or to taste, pepper. Stir to mix.
Turn of heat. Let mixture cool.
Add 1 cup of grated cheese to mixture. It’s now ready to go into quesadillas.
Heat frying pan on medium-low heat.
Warm a quesadilla wrap on one side. Remove and place quesadilla with warm side facing up on plate or dry cutting board, add a few tablespoons of mixture to one half of it. Fold over the empty half to make a semi-circle. Prepare one more in the same way.
Spray frying pan very lightly with oil.
Place both back on the warm frying pan and cook on both sides until golden.
Remove carefully with spatula, cut each into 3 slices and enjoy.
Peel and mash avocado.
Add to the bowl that has the diced onion, tomato, coriander, garlic and green chilli.
Add seasoning – 1/2 teaspoon salt and lots of pepper.
Add juice of half a lemon – mix and check for taste, add more lemon if needed.
